-The Lemon Nedra-

My In-laws just brought us a bag of lemons from their backyard tree in California &  I wanted to use the lemons for a family dessert. Everyone was happy with it. This cheesecake served 4 & was kind of reverse engineered from a lemon tart I ate in L.A. If you have a lemon tree this is a nice way to use the fresh lemons! no cooking needed, just a blender or a food processor.

 Crust:
 in a food processor pulse the following ingredients until they become a dough.

 -1/2 cup almond flour
-1 1/2 cups shredded coconut
-2 tablespoons coconut sugar or brown sugar
 -1/4 teaspoon sea salt
-2 tablespoons agave
-1 tablespoon coconut oil
-3 pitted dates

 Filling:
 in a blender blend up the following ingredients until smooth.

 -1 1/2 cup pumpkin seeds
-1/3 cup meyer lemon juice
-1/3 cup agave
-1/3 cup coconut oil
-1/4 cup nut milk
-1 tsp vanilla
-1/4 tsp sea salt
-2 tablespoons lemon zest

 pack the crust on the bottom of a 9 inch tart pan or any dish you like & freeze for 15 minutes before adding the filling.
pour filling on top & decorate with mint or any fruit. refrigerate for a few hours before serving.

I want to bite a huge stack of tortillas right now- like fresh warm tortillas. If someone shows up at my house with a stack of tortillas. I will gladly bite them. ---------------------------------------------tortillas.
