+Choco Raw Fudgey Cookies+


These cookies are inspired by a Mathew Kenney recipe from his book Everyday Raw. I changed it around for my husbands 26th birthday.

-for the cookies:
2 1/2 cups cashew flour ( I chopped up cashews into a powder in the food processor)
1 3/4 cups raw sprouted buckwheat flour
1/2 cup raw cacao powder
1/4 cup water
3/4 cup agave nectar
1 tablespoon vanilla
1 teaspoon pink salt

add all ingredients to food processor until thick dough forms. form into cookie shapes on teflex dehydrator sheet

-For the choco fudgey stuff:

1 3/4 cups almond flour
1 cup agave (or yacon syrup)
1 cup raw cacao powder
1/4 teaspoon vanilla
1/4 teaspoon almond extract
1/2 teaspoon salt

hand mix until well homogenized

spoon fudge onto the cookies and put in dehydrator @ 115 for 6 hours (they are delicious soft/fresh too)
if you have leftover fudgey stuff it is good frozen for easy brownies.
